So, growing up, I hated vegetables. I mean seriously hated them. It turns out, through no fault of my mom, that canned and frozen boiled veggies suck. I’ve learned that I like just about all veggies now, except the wretched onion. One of my favorite dish dishes is roasted carrots. When you roast carrots, their natural sugars caramelize. This gives a depth of flavor tyou can’t get through boiling or steaming.
Roasting carrots gives a crispy exterior and a tender and juicy interior. Add in some “bussin” herbs and spices and you’ve really got some great flavors going on.
Compared to other cooking methods, roasting requires minimal preparation. IYou can do it in on a single sheet pan, making it an easy and convenient option for a quick side dish.
Bonus: Roasting carrots is an excellent way to preserve their nutritional value. Roasted carrots retain most of their vitamins and minerals when cooked at high temperatures for a short period of time.
Air Roasting Benefits
In this recipe, I’m recommending Air roasting. This cooking method uses hot air to circulate around the food, resulting in a crispy and evenly cooked dish.
Air roasting carrots is a great option to achieve a similar texture to traditional roasting but with less oil and quicker cooking time.
To air roast carrots:
Toss them in a small amount of oil and your desired seasonings.
Spread them out on a baking sheet.

Easy Cozy Air-Roasted Carrots
- air fryer
- 1 pound carrots peeled, quartered, cut into 3" long pieces
- 2 tbsp olive oil extra virgin
- 2 tsp Tastefully Simple Rustic Herb Seasoning
- 1 tsp salt
- 1 tsp nutmeg
- .5 tsp pepper
- Preheat air fryer oven to 425 F.
- Peel, cut and section carrots and toss in a bowl.
- Toss carrots with EVOO.
- Sprinkle on seasonings and toss and mix well.
- Spread out on air fryer tray in air fryer oven.
- Cook for 20-25 minutes or until tender.
