Continuing in my series of veggies I used to hate until I learned how they really should be cooked, let’s get to choppin’ broccoliiiii (are you weird enough to hear that song in your head?). If you’re not a big fan , roasted broccoli might change your mind, it did mine! The crispy texture and caramelized flavor can turn even the most reluctant eater into a broccoli lover.
Roasted broccoli is a versatile side dish that pairs well with any protein. You can also add it to salads, pasta dishes, or stir-fries. Broccoli is packed with nutrients, including vitamins C and K, fiber, and antioxidants. By roasting it, you’re preserving those nutrients and adding a delicious twist.
And if you’re worried about it being too bland, you can always experiment with different spices and seasonings. For example, try adding smoked paprika, cumin, or chili flakes for a smoky or spicy kick. You can also drizzle some balsamic vinegar or honey for a sweet and tangy flavor. Roasted broccoli is also a great option for meal prepping. You can roast a big batch on Sunday and have it ready for the week ahead. It’s a convenient and healthy snack or side dish that you can grab on-the-go. Another great thing about roasted broccoli is that it’s easy to customize based on your preferences. Less oil, or change the recipe to air-fry to use less oil and still have the same amazing flavor!
If you prefer your broccoli with a bit of a bite, you can roast it for less time. If you like it extra crispy, leave it in the oven for a few extra minutes.
- 1/3 cup Tastefully Simple Avocado Oil
- 2 tbsp lemon juice
- 2 tbsp Tastefully Simple Everything Seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 1 pound broccoli florets chopped to bite size piefces
- Preheat oven to 425 F.
- Chop your broccoli florets into bite-sized pieces
- In a bowl, add broccoli and oil, lemon juice and seasonings. Mix well
- Spread coated broccoli onto sheet pan covered with parchment paper.
- Roast at 425 F for 20-25 minutes.
